Steaming Eggs on an Espresso Machine

Used to do this in the mornings at KC Coffee and Trading Co in Marysville Ca. Unfortunately the coffee house is not there anymore…too sad. You really don’t need any milk but a little dash of 1/2 and 1/2 or heavy cream works well. We would put a little bit of butter and pre-cooked or blanched viggies of your choice. Place all of it inside a real butter croissant…..YUM!
We called it the “JET SCRAMBLE” Because it was really loud to prepare and we had Beale Air Force Base in our community! Really fun! Clean the wand quickly!
